Until then, the wines from the peninsula and abroad were imported to supply tourism trade. Wineries such as Can Rich in Buscastell or Can Maymó in Sant Mateu began to harvest wine to gradually introduce them on the menus of island restaurants. A winemaking experience that was combined with the preparation of other selected local products typical of the island such as vermouth, the famous herbal liqueur, olive oil, balsamic vinegar or salt.
From Formentera, the wines from Cap de Barbaria or Terramoll have shown that the saline climate of the smallest island in the Balearic Islands is the ideal place to produce wines with a strong finish that can be exported anywhere on the planet.
Wineries such as Ibizkus have their market niche in rosé wines, which are clearly on the rise, and white wines, which have sold more than 60,000 bottles in recent years.
You don't have to go far to taste the wines produced in Ibiza, regulated with the geographical indication protected since 1996. 80% of the bottles drunk in 2017 (more than 1400 hectolitres) were sold on the island.
